How to Make Korean Spicy Marinated Raw Crab (Yangnyeom Gejang)

🦀 What Is Yangnyeom Gejang?

Yangnyeom Gejang (양념게장) is a traditional Korean dish where raw blue crabs are marinated in a spicy, sweet, and savory sauce. It's often called a "rice thief" because it makes you crave more rice with every bite. If you enjoy sashimi or ceviche, you’ll love this unique Korean seafood experience.

🛒 Ingredients

  • 2–3 raw blue crabs (fresh, cleaned, and halved)

  • 1/2 cup Korean chili flakes (gochugaru)

  • 1/4 cup soy sauce

  • 2 tablespoons plum extract (or honey)

  • 2 tablespoons sugar

  • 2 tablespoons rice syrup (or corn syrup)

  • 1 tablespoon minced garlic

  • 1 tablespoon minced ginger

  • 2 green onions (chopped)

  • 1/2 Korean pear, grated (optional but recommended for sweetness)

  • 1 teaspoon sesame seeds

🍳 Instructions

  1. Wash and clean the crabs well. Cut them into halves or quarters.

  2. In a large bowl, combine all the marinade ingredients. Mix thoroughly.

  3. Add the crabs and coat each piece well with the sauce.

  4. Transfer to a sealed container and refrigerate for 1–2 days to marinate fully.

  5. Serve cold with hot rice and enjoy! Garnish with sesame seeds if desired.
